One such example is Helsinki-based Kaffa Roastery, which recently partnered with Elev, a Finnish AI consulting startup, to develop their first AI-generated blend called “AI-conic.”

By leveraging large language models (LLMs) like ChatGPT and Copilot, Kaffa Roastery was able to create a blend of four different beans based on tasting notes provided to the AI. Surprisingly, the AI’s suggestions resulted in a successful and unconventional blend that required no changes from the roastery staff.

Kaffa’s managing director, Svante Hampf, expressed optimism about the potential of AI in the coffee industry, highlighting the unique coffee taste descriptions generated by the technology. This experiment marks just the beginning of how AI could revolutionize the coffee-making process in the future.

Finland’s strong coffee culture, fueled in part by its northern location and long days, has made coffee a focal point in Finnish society. Finnish cafes not only serve as places to enjoy a cup of coffee but also as hubs for family-led childcare services, further cementing coffee’s importance in the culture.

While Finland is at the forefront of coffee experimentation with AI, other companies around the world are also exploring AI-generated beverages. From Coca-Cola’s Y3000 to Species X brewery’s AI-created beers, the trend of using AI to develop unique flavor combinations is gaining traction in the beverage industry.

In addition to AI experimentation, Finland’s coffee industry is also embracing cutting-edge technologies like lab-grown coffee beans. With climate change posing challenges to traditional coffee farming, scientists have found ways to produce coffee beans in a lab in a fraction of the time it takes to grow them on farms. While lab-grown coffee may not yet match the flavor profile of traditional beans, it could be a viable solution in the face of dwindling natural coffee sources.
