Intelligentsia Cold Coffee Biscoff Tiramisu
Adapted from Zachary’s Perfect Cold Brew Tiramisu in But First, Coffee
Ingredients:
– 2 large eggs, separated
– 67 grams of sugar
– 226 grams marscapone cheese
– 240ml Intelligentsia Cold Coffee
– 24 Lotus Biscoff Cookies
– Pinch of salt
– Cocoa powder
Instructions:
1. In a medium bowl, beat the egg yolks and sugar until thickened.
2. Gently fold in the mascarpone cheese.
3. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
4. Fold the egg whites into the yolk and mascarpone mixture.
5. Dip Biscoff cookies in Intelligentsia Cold Coffee and layer them in a springform pan.
6. Add a layer of the mascarpone mixture on top of the cookies.
7. Repeat the layers until the pan is full, ending with a layer of mascarpone.
